Farmers in the Mekong Delta province of An Giang are currently harvesting sugar from thousands of palmyra trees. The Bay Nui community (so-named for the seven mountains in their area) are busy climbing on the dangerously tall trees to pick palmyra fruit, decant its juice and reduce it to a pungent sugar paste.
