How to make pork rib soup with durian


Pork rib soup with durian is a specialty from Vietnam’s Central Highlands, perfectly combining the durian’s rich taste with the sweetness of the pork ribs.

– 3-5 bulbs of unripe durian

– 300 grams of pork ribs

– 1 dry onion

– Green onion

– Coriander

– Seasonings (salt, pepper)

Preparations:

1. Prepare the ribs:

– Fill a pot with water and add a little salt.

– Bring the water to a boil, then add the cleaned pork ribs.

– Boil the ribs for about five minutes, then remove them from the pot and rinse under cool water.

– Transfer the ribs to a pressure cooker, add the dry onion, and cook until tender.

2. Prepare the durian:

– Remove the seeds from the durian bulbs and cut the flesh into bite-sized pieces.

– Chop the green onion and coriander.

3. Cook the soup:

– Once the ribs are soft, add the durian pieces to the pressure cooker and boil for around five minutes, ensuring the durian remains crunchy.

– Add fish sauce and seasonings to taste.

– Add the chopped green onion and coriander, then turn off the cooker.
